Kombu or Konbu is a large brown seaweed belonging to the Phaeophyceae family. It is a seaweed rich in potassium, laminaria, alginates and iodine. When used regularly it helps reactivate metabolism, promotes blood circulation, regulates blood pressure and aids drainage and detoxification.
Kombu seaweed is also rich in glutamic acid, the original natural version of the of the powerful flavoring substance that is monosodium glutamate. It is often used in natural food for its technical function in cooking legumes (it makes them more digestible) and in the preparation of broths and soups (it complements and enriches the flavor of vegetable broth). If you let it air-dry a few days it can also be munched as a snack.
