CHARACTERISTICS
ATLANTIC WAKAME (Alaria esculenta) is a brown seaweed belonging to the Class Phaeophyceae. It consists of lance-shaped leaves fringed on two sides with a midrib. WAKAME seaweed thrives in swift currents and the most tender fronds right from turbulent waters.
NUTRITIONAL VALUES
Organic WAKAME seaweed contains a wide variety of unique Phytonutrients, including Sulfated Polysaccharides also called Fucoidans. WAKAME seaweed is naturally rich in Mineral Salts, Folic Acid, Trace Elements, Vitamins A, E, PP, C, B group, Niacin, Pantothenic Acid, Phosphorus, and excellent levels of Riboflavin. WAKAME seaweed is particularly noted for the richness of one of its Carotenoids called FUCOXANTIN.
Protein has an average content of 16.3 grams per ounce, Amino acid profile and protein quality indices are also high. WAKAME seaweed contains all the essential Amino Acids contributing 47.1% of the protein content.
PROPERTIES
WAKAME seaweed has countless nutritional and functional properties. Useful for acid reflux due to its Alginates content. Beneficial for healthy skin, nails and hair.
Also present are good amounts of iodine, which contributes to optimal thyroid function and stimulates the body’s basal metabolism.
Due to the presence of Fucoxanthin some recent medical-scientific studies conducted by researchers at Japan’s Hokkaido University WAKAME is able to help the body burn fat. In addition to stimulating the production of docosahexaenoic acid (DHA), which exerts an antithrombotic action and increases the sensitivity of cells to insulin, Fucoxanthin promotes the elimination of excess body fat.
Alkalizing Mineral Salts, Alginic Acid, Folic Acid and Fucoxanthin active principles present in WAKAME seaweed intervene in the regulation of the body’s acid-base balance, increasing the alkaline reserve of the blood.

HOW TO USE

For the preparation of delicate dishes, the ribs should be removed and cut after soaking. During soaking its bright green color reappears. WAKAME seaweed is much loved for its characteristic nutty aftertaste. Its leaf is firm but quite tender can be eaten indifferently raw or cooked. WAKAME is ideal for preparing tasty soups, mixed salads, mixed vegetable dishes, and fish dishes. WAKAME seaweeds are a valuable ingredient for soups and the classic miso soup that is not complete without this seaweed.
